Banana cream pie. I usually make my own pie crust, but I only had a couple of hours to make this as well as the oreo cake.

Oreo cake for a friend's birthday... Chocolate cake filled with oreo buttercream frosting, then drizzled with semisweet chocolate ganache. On the top are whipped cream swirls and oreos.

Another example of fondant decorations- chocolate cupcake with coconut buttercream and flower topper.

Mother's day cake- 3 layer vanilla butter cake filled with homemade lemon curd and vanilla bean buttercream. It's topped off with some of the homemade lemon curd as well as fresh blueberries and toasted, chopped walnuts. 

I had some leftover lemon curd so I made some coconut meringues. These are fun because the have a completely solid shell but completely collapse into your mouth with one bite.


My 18th birthday cake- 3-layer carrot cake filled with cream cheese icing and topped with toasted, flaked coconut and homemade carrot-cake balls.

These were fixer-uppers. I had an idea for a banana cupcake filled with banana cream pie filling topped with Nutella buttercream. While they tasted good, the light brown frosting made for a not so appetizing cupcake. I took this opportunity to practice with my fondant decorating and now they look edible!!

These were time consuming but really fun. It's a banana cupcake filled with homemade vanilla bean dulce de leche, rolled in flaked coconut, and topped with coconut buttercream and a blue pearl sprinkle.
